I've seen a few forums that are using domain names with words in them that doesn't match the forum name.

Have you noticed this at all? Why do you think this is?

I suspect people don't want to (or can't afford to) buy a new domain name and they wish to get the most value out of their owned domain name,

Could just be using a "brandable" domain.

Example: Two forums for widgets — one established on WidgetsForum — exist. Instead of competing with the older forum with similar keywords, they choose a brandable name, Pepsi, let's say.

Over time, a brandable is able to gain notoriety, and is easier to connect to the real subject, thus easier to be remembered as a direct type-in (I'd suggest 5 to 8 letters based on personal experience in other niches).

It could be.

However, I've seen one domain with keywords that were completely unrelated to the forum niche it was being used for, but they would try to "brand" the domain name keywords with the forum and its niche.
